The classic method
Our wine cellar offers customers sparkling wines made using the classic method.
The classic method or Champenoise method (for champagnes produced in the Champagne region of the same name) or Crémant method (for sparkling wines produced in the rest of France) differs from the Charmat method mainly because it includes the second fermentation, and thus the sparkling process, directly in the bottle.
Sparkling wines usually have a base consisting of a cuvée, i.e. a blend of wines of different types or vintages, provided that it is not a vintage sparkling wine, i.e. made from a single wine of a single vintage. The cuvée is bottled with the addition of a selection of sugars and yeasts (tirage). In the bottle, the wine undergoes a second fermentation, resting horizontally for an average period of 24 to 36 months, with peaks of 120 months or more.
